Food 365 | Day 362: Kabocha Risotto

I remember when I was younger, my grandmother would sometimes cook up a big pot of pumpkin risotto for an afternoon snack.  The risotto was made with sweet sticky rice and the ratio of pumpkin to rice was practically one to one.  Using a kabocha pumpkin, my mom recreated this treat from my youth.  I loved the sweet and savory combination of the kabocha and the ginger flavored rice.  Now that I have seen how this was so easily recreated, I will definitely be making this in my kitchen.
