Food 365 | Day 314: Mexican Corn Salad

Sunday night potluck at SB’s place was Mexican themed with a lovely slow roasted spiced pork butt, soft tacos and guacamole.  This called for some Mexican style street corn with cotija cheese and paprika mayo.  Instead of a messy corn on the cob, I took it off the cob into a salad form.  All the deliciousness without the mess, a lovely solution to the age-old problem of trying to get corn from between your teeth.
