Food 365 | Day 246: Herb-roasted Chicken with Tomato and Zucchini Gratin

Making a dinner for two in approximately 35 minutes is no longer a challenge now that I am a “pro” with Plated.  However, given my finicky oven, the roasting part took a little longer than expected.  None the less, the slow process kept the chicken breast so juicy and moist.  It might have even converted me, a dark meat enthusiast.
