Food 365 | Day 213: Cooking with Friends

Even though cooking with friends is normally reserved for weekends, once in a while an easy recipe can be easily doubled or tripled. I went with another slow roasted salmon recipe which I topped this time with minced thyme leaves, lemon zest and garlic. They sat on top of lemon slices and went into the oven while we made a side of creamy cauliflower brown rice with green peas and arugula. The result was a light and healthy dinner that was relatively easy to prepare on a weekday.
