Food 365 | Day 210: Slow Roasted Salmon Salad

I haven’t slow roasted salmon in a while and honestly, I don’t know why. All it took was a quick marinate in a mixture of soy, miso, brown sugar and mirin, the coho salmon filet was ready to spend the next 30 minutes in a 250 degree oven. While it cooked, I put together the rest of the salad, a mix of mizuna greens, haricot vert, and soy seasoned avocado slices. The salmon was moist and tender and so well seasoned from that quick two hour long marinate. A complete meal ready in 30 minutes!
