Food 365 | Day 178: FPB’s Macaron Ice Cream Sandwiches

Francois Payard‘s macaron ice cream sandwiches are kind of the macaron’s answer to the sweltering New York heat.  FPB offers them in four flavors, pistachio raspberry, chocolate with cocoa nibs, strawberry cheesecake, and coconut mango.  Given my recent obsession with all things coconut, I couldn’t resist picking up the coconut mango for a little snack.  Even though the ice cream resisted the blade of the knife when I tried to cut into it, the center was surprisingly soft and pliable.  Not too sweet and full of tropical flavors, this was a great combination of macaron and ice cream in a few bites.
