Food 365 | Day 176: Chicken Salad with Sesame Miso Dressing

These days, the goal for dinner is not to only make it healthy and quick but also to minimize the time that the stove is on.  To achieve this, I decided to prepare a chicken salad made with shredded rotisserie chicken breast from Whole Foods, shiitake mushroom, baby broccoli and baby kale.  I blanched all the vegetables in one batch and made the base of the sesame miso dressing on Sunday.  All I had to do today was adding a little bit of soy sauce and sesame oil to the sesame miso paste and presto, dinner is ready.
