Food 365 | Day 106: Mushroom and Spinach Omelette

So here is my take on one of my favorite omelettes, the cream of spinach and wild mushroom omelette from La Bonne Soupe. To be healthy, I use sauteed baby spinach instead of cream of spinach and cream of mushroom from Barcelona that I brought back from my trip. With ample butter and a pinch of truffle salt, I was pretty pleased with the end result.
