Food 365 | Day 78: A Little Coconut Crazy

These days, if you look in my pantry, you will find coconut in at least 3 different forms.  I started with the Harmless Harvest raw coconut water, fantastic for post work out.  A pink bottle means that there is high levels of phenols, an antioxidant, so I always try to dig around the Whole Foods shelves for a few pink ones.  I moved onto Trader Joe’s addicting roasted coconut chips which I am putting on anything that needs a little something sweet and crunchy.  And finally today, I picked up a jar of coconut oil at Trader Joe’s.  I am still looking to figure out how to use this new addition.  Pancakes?  Cookies?  Maybe even for roasting fish or vegetables!
